So far, Pinterest has yet to fail me on the recipe front. This is one of the best I've ever made. I was kind of annoyed at first with this recipe because I started cooking at 8pm and even though all I really had to do was cut up a pepper and onion, I was getting antsy. Jon helped me with the rest and holy buckets it was worth my 5 minutes of feeling annoyed. This dish is out of this world good and I immediately thought of my bff Alyssa (you will LOVE this girl!).
Ingredients
2-3 cups of cooked, shredded chicken (I bought a rotisserie chicken from Costco)
2 tbsp olive oil
2 garlic cloves, minced
1 medium onion, diced
1 red bell pepper, diced
1 4 oz. can diced green chiles
1/2 tsp salt
2 tsp chili powder
1 tsp cumin
2 10 oz.cans green chili enchilada sauce
2/3 cups red enchilada sauce
2 cups shredded cheese (I used colby & monterrey jack)
1 cup sour cream
Penne pasta
1. Dice up the bell pepper and onion, meanwhile, cook up the pasta
2. Cook the diced onions in the olive oil in a deep skillet for 3-5 minutes. Add the red bell pepper and minced garlic and cook another 3-5 minutes
3. Add the cooked chicken, green chilies, cumin, chili powder, salt and enchilada sauces. Let simmer for 8-10 minutes
4. Add the cheese and stir until it is fully melted
5. Add the sour cream and heat on LOW until it is melted (it will curdle if you heat on high)
6. Serve the sauce over your drained pasta
