Firecracker Casserole


Jon picked out this recipe from my Pinterest board and was so excited for me to make it. Let's just say I didn't even get a chance to eat leftovers because Jon gobbled them up within a few days! 

Ingredients
2 lbs. ground beef
1 cup chopped onion
1 tsp salt
2 tbsp chili powder
1 tsp cumin
2 tbsp chopped Serrano peppers
1 can ranch style beans, undrained
1 can rotel tomatoes
1 can cream of mushroom soup
8 corn tortillas (broken up into 6 pieces each)
6 oz. shredded cheese

1. Brown the beef and drain the fat if necessary
2. Add the chopped onion, salt, chili powder, cumin, and peppers to the pan and stir for 3-5 minutes until onion is soft.
3. Pour the meat mixture into a large bowl and add in tomatoes, beans, and cream of mushroom soup
4. Grease a full sized baking dish and layer the meat mixture and tortillas. Repeat and top with cheese
5. Bake at 350 degrees for 50 minutes
6. Let cool and enjoy!
