Parmesan Ranch Chicken

Winner winner, chicken dinner. I haven't posted a recipe in a while and I have so many yummy ones in the queue. Y'all...today's recipe will be a staple in our house for many years to come. It's one of those meals you can't help but to smile while eating and think "wow, I am a good cook"...yet it takes about 2 seconds to prepare. I have had my fair share of chicken- baked, fried, grilled- but this one takes the cake.

Ingredients
4 boneless skinless chicken breasts (uncooked)
3/4 cup corn flakes
3/4 cup Parmesan cheese (I used the shaker kind but shredded will work)
1 packet dry ranch dressing  mix
Olive oil spray

1.Crush up the cornflakes and mix in the Parmesan cheese and ranch mix.
2. Spray each chicken breast with olive oil spray (healthier than dipping in butter) and coat with the corn flakes mixture
3. Lay flat on a greased or foiled baking dish
4. Bake at 350 degrees for 40 minutes

Last Fling Before The Ring

This weekend I hosted 13 ladies at my casa to celebrate our girlfriend Maggie's 'Last Fling Before the Ring'. Maggie is getting married in Mexico in a little over 2 months (okay I have a daily countdown going!) and Jon and I are both in the wedding. Ole!

I mean how gorgeous is this bride?!

The day consisted of games, a lingerie shower, girlie primping, dinner on the lake, a limo, Capitol City Comedy Club (where the comedian brought Maggie up on stage and asked her if she wanted to make out!) and 6th street. The past 2 weekends I've set records of staying up late since graduating college. And ya know when you get married, you don't really have girl sleepovers so it was fun!

I will let the pictures do the talking...

(yes there were creepy old men wanting to take pictures with us at dinner haha)

Yesterday was spent in total relaxation...after church we dozed on the couch, watched the Olympics, dozed some more, ate takeout...it was perfect! And if you're interested, here is the link to my bachelorette party :-)

The Broken Road

Hi, dear friends of Ruthie! I'm Alana and I blog over at Mrs. Alana's Miscellany and I'm so excited to be posting here today. The first guest post I wrote for Ruthie about my eHarmony love story actually got shared on eHarmony's twitter and facebook pages, so good things seem to happen when we get together! I hope that one day we will get to meet in person, since she is such a sweet, fun-loving girl and I can already imagine the amazing Anchorman-quote-filled double dates we will have.  :)

I've been married for a little over a year now to a man I met online barely two years ago. Some days it feels like I've known him all my life but other times I wake up and am amazed that I'm suddenly an Air Force wife living in Nebraska, of all places! I often think about all the seemingly insignificant things that happened to us in our lives that ultimately led us to each other, especially those things that seemed terrible at the time. It's not until later in life that we are able to look back and see that everything we went through was for a reason.

Mike and I loooove to watch How I Met Your Mother, although sometimes I get impatient and think "WHEN do we get to see the mother?? What does this episode have to do with their love story?". Then I realize that life is like that--you can't see the amazing path you are on until you reach the end. Looking back I see all the roadblocks and detours that were so disappointing at the time and recognize them as the blessings in disguise that they truly were. Ending a four-year relationship with a great guy that everyone (myself included) thought that I would marry, being unable to find a way to stay in Ireland after a magical semester abroad, not having any free time during grad school which convinced me to try eHarmony, getting my heart broken for the first time just a few months later, and picking up and giving online dating another try after all that...everything was leading me to Mike.

Little did I know, everything in one Virginia boy's life was leading him to me. Not getting into his first choice of college led him to the University of Alabama. Despite being six years apart, our time there overlapped but we never met because the time wasn't right. While I went from one long relationship to another, Mike stayed single for FIFTEEN years, despite his best efforts (thank goodness--fewer exes to worry about!). After he graduated from college, he fulfilled his lifelong dream and joined the military. As a college graduate he should have joined as an officer, but his recruiter told him that they weren't accepting people in his field and that he would have to enlist (which he later found out wasn't true, but it was too late). Even today it would be easy for us to be bitter about what happened, but then I realize that it was the only path that could have led us to each other.

Even after we were matched, fate urged us on. Despite initially thinking that he was "too pretty", I responded to his first message. Dating long distance (he was in Georgia, I was in Alabama) was a challenge, but we made it work. Then there was the terrible day that we found out he was being stationed in Nebraska, and it felt like the end. Little did we know that not even a year later we would be enjoying our new city and new life together in Omaha.

It's mind-boggling when you start to really think about everything that could have been different and changed our happy ending, which just makes it more amazing that we found each other. Life may seem like a series of random events, but I believe that if you really think about it, you'll be amazed at the delicate path that led you to your happy ending. And if not, maybe you're just not there yet, so hold on and know that everything is leading you to something wonderful.

Thanks to Ruthie for having me, and I hope the rest of you will come by and say hello!

Home Tour Video

I was kinda bummed at how little they showed our house after we had moved in on the show. We spent so much time talking about the chevron wall during filming yet they barely showed it (I know some of you spotted it though!). We've actually done a lot since they filmed out house and I thought it would be fun to do a little house tour. I will apologize up front about my Blair Witch filming skills but I shot this with my FlipCam while walking and throwing the ball for Ernie.

6 month bump

Two weeks ago I got the pleasure of photographing my sister and her 6.5 month baby bump. My sweet little niece will be arriving the middle of October (possibly on my birthday on the 14th!) and we are ecstatic to meet her. She will be the first grandchild and great grandchild on both sides and is already spoiled rotten in pink. I had lots of fun playing around with my camera and look forward to taking some of her and her hubby in a few weeks. And of course when her baby girl arrives!

Her intials
