This delicious crockpot recipe comes from The Fitnessista. There's not much to say besides that it is GOOD! Filling, healthy, easy, delicious!
Ingredients
2 medium sweet potatoes, peeled and diced
1 small onion, diced
1 red bell pepper, seeded and diced
1 can black beans, drained
1 14 oz can diced tomatoes, drained
1.5 cups veggie broth
3 garlic cloves, minced
1 tbsp chili powder
1 tsp cumin
1 tsp paprika
A pinch cayenne
1/2 t salt
*Optional, 2 large boneless skinless chicken breasts, cut into chunks

1. Combine all ingredients in crockpot
2. Cook on low for 4-6 hours (my crockpot cooks SO fast!)
