This delicious crockpot recipe comes from The Fitnessista. We paired the chili with turkey dogs for a night of NFL football!
2 medium sweet potatoes, peeled and diced
1 small onion, diced
1 red bell pepper, seeded and diced
1 can black beans, drained
1 14 oz can diced tomatoes, drained
1.5 cups veggie broth
3 garlic cloves, minced
1 tbsp chili powder
1 tsp cumin
1 tsp paprika
A pinch cayenne
1/2 t salt
1. Combine all ingredients in crockpot
2. Cook on low for 4-6 hours (my crockpot cooks SO fast!)
3. Let cool and enjoy!
The picture above is actually before I turned the crockpot on. Unfortunately I forgot to take a picture when it was done...it pretty much looked the same but the potatoes were mushy (cooked). I think next time we make this chili I will add some shredded chicken for extra protein.
