I put on the fake mustache I got from the Anchorman Quote Along and Ernie was hysterical. He was so weirded out and kept trying to sniff and lick it. I stuck it on him for a second and I pretty much peed myself with laughter...but Jon made me take it off of him. Please don't pay attention to my grease monkey hair and ratty pony tail :-)

(I am trying not to use Picnik much lately and testing out other software/sites. So far I like Pixlr.com a lot but still isn't as easy as Picnik.)

We had a wonderful, relaxing weekend. Other highlights include

• Shark Tank is back! We missed last week so we got to catch up on 2 hours of it, we love that show
• Date night
• Brother's basketball game
• Finding a random hard boiled egg in my purse on Saturday...I still don't know where it came from?
• Catching up with one of my close friends on Saturday night and meeting her kick ace boyfriend who looks like Shaun White. We also ate at an awesome Mexican food place in Austin called Santarita...go there!
• Great worship at church on Sunday
• Taking a 2 hour nap that afternoon...and I never take naps, yay.
• Having my parents and brother over on Sunday night for dinner
• Oh and I almost forgot...another installment of Sleepy Ruthie Quotes...

Why am I so weird?

The countdown to our anniversary weekend begins :-)

Stuffed Spaghetti Squash

This recipe has been on my mind for a while now and I am so glad I got around to making it. Luckily I had my husband's help in the kitchen because it involves lots of chopping and multitasking...but it is SO worth it. I can't even explain how good this meal was. And it was so healthy too!

Ingredients 

*Makes 2 servings (tons of leftovers though!)

1 large spaghetti squash, cut lengthwise

1/2 tbsp olive oil

1/2 tsp minced garlic

1/2 chopped white onion

4 celery stalks, chopped

6 baby carrots, cut up into small pieces 

1/2 cup diced red pepper

2 slices pre cooked bacon, diced

1/2 cup zucchini. chopped

1/2 cup yellow squash, chopped

1 cup fresh spinach leaves

1/2 cup Italian style diced tomatoes (canned)

1/4 cup breadcrumbs

3 tbsp goat cheese

1/2 cup mozzarella cheese

3/4 cup marinara sauce

Parmesan cheese

Salt & pepper to taste

**Optional- ground/shredded meat...we added it to the mix for extra protein but it isn't necessary

1. First things first, chop all your veggies which will be the most time consuming so I like to do it ahead of time.

2. Bring a large pot of water to boil. Cut your spaghetti squash in half, length wise and remove the seeds. Place in boiling water for 12-15 minutes until tender

3. Meanwhile, cook the onion and garlic in olive oil in a LARGE skillet or deep pan.

4. Add all your veggies  and bacon when onion is soft, cook for 5-10  minutes or until veggies are soft. 

5. When your squash is tender, scrape the "meat" out of the inside into a large bowl. It will be like cooked, hair like pasta. Save the shell!

6. Add the cooked veggies, breadcrumbs, marinara sauce, goat or feta cheese, and any spices you want to the spaghetti and mix well 

7. Scoop half of the mixture into each of the spaghetti squash shells (you can layer in the meat if you choose)

8. Top with mozzarella and Parmesan cheese and bake at 375 degrees until cheese is melted

Anniversary tradition

Guess what?

Our wedding anniversary is next weekend! I still can't believe it. I am so excited I could fist pump

We are going on a little stay-cation to a resort right in Austin. Massages, champagne, and eating the (probably gross) top tier of our wedding cake. We are ready to relax! We are also going to San Francisco two weeks later as a belated anniversary/Valentine's trip so that will be fun!

Traditionally, one gets their spouse some sort of paper gift on their 1st wedding anniversary. This custom goes way back and I am all about traditions. Something old, something new, something borrowed, something blue, and a six pence in your shoe...yep that was me. So anyway...I already have Jon's gift ready to rock, I think that is why I am so giddy about our anniversary because I can't wait to give it to him! I've had it for awhile. You will just have to wait to see what it is!

I was at a cookie exchange with my madre over the holidays and the ladies were talking about the traditional anniversary gifts. Here is an example of the "big" anniversaries...

I was laughing trying to think of what Jon would get me, I mean besides a card which is obviously made out of paper, and my mom reminded me that money is made out of paper. Haha. Can you imagine, "hi honey, happy anniversary, here is a Benjamin". Especially funny since we share money too. Jon...no dinero for our anniversary please :-). 

Since I love traditions, I wanted to know what you have done for anniversary gifts in the past. Or if you aren't married/married but haven't gotten to your anniversary yet, can you think of good ideas? What should I get Jon next year? Cotton long Johns?

Last night we went to the Anchorman Quote Along at our favorite movie theater, The Alamo Drafthouse (the original theater where you can eat and drink during the movie)

Mustaches were a part of the night, of course

It was so funny to look around the theater and see everyone wearing mustaches. 

The quote along was put on by a company called The Action Pack and they do them for other movies too. I've never been to one before (nor had I ever seen Anchorman) but I have been to a Master Pancake Theater (which is like the old Mystery Science Theater where they have people making fun of the movie up front) for Forest Gump. It was hysterical! The Drafthouse does quote alongs, Master Pancakes, girls nights and now...text alongs where you can text something to a certain number about the movie and it shows up on the screen (usually a terrible movie).

Jon wore his mustache the whole time (it was too big for me and was getting everywhere)

He also wore his maroon corduroys that only make appearances at special events

So back to Anchorman. I think I may have seen it right when it came out years ago but not the whole thing. I kind of hated it for the longest time so it being Jon's favorite movie, there was some tension  haha. I LOVE Will Ferrell but for some reason had a bad taste in my mouth of Anchorman. Well...last night was a blast! It was super funny and I think it was because Jon quoted most of the movie and was belly laughing the entire time. The movie is just SO random and weird. I was laughing just listening to Jon crack up. I think most married people can agree that sometimes just watching your spouse have fun or doing something that they love is fun and rewarding in itself. They showed memorable quotes at the bottom of the screen so you were supposed to shout them out. They also had New Year's Eve blowers for the jazz flute scene. Before the movie started, the host conducted some funny games including a 'punt Baxter' contest and a chugging contest. One guy had to chug a pint of beer and a pint of milk...ewww! It was such a fun night and I am so glad I gave Anchorman a second chance. I loved all the celebrity cameos!

We've been watching a lot of good movies lately on Netflix. Our favorites have been The Client, Win-Win, and The Fan. Totally not normal Ruthie movies but I have been enjoying watching outside my normal genres.

Also, what are some good movies I should see? Seems like there aren't any good new releases lately...we've been watching a lot of old movies.

Blog stuff

Welcome to my new and improved blog today friends. Did you notice a theme?

Yep. Mustaches!!!!!

If you've been reading a while, you would know that my husband, Jon and I love mustaches. And no, we don't love them because they are "in" right now. We didn't jump on the mustache bandwagon...we STARTED the mustache fad. Ever since I met Jon a few years ago, he has been obsessed with mustaches. Jon can spot an awesome mustache in a crowd of a million people. Sunday night he was all about finding mustaches while watching football. I don't know what it is but we've always been mustache spotters/lovers. And this winter, Jon had the opportunity to sport his own set of mustaches..

I love that people will see mustache stuff out and about or on Pinterest and send it to me. Jon and I seem to be collecting stache items...we are thinking we need a mustache themed room in our new house. 

So I hope you like the new layout! I've been wanting to make things more simple and as much as I loved my chevron thing, I like how sleek my blog looks. I also kinda started freaking out that I wouldn't have access to Picnik in 3 months so I thought, what the heck, time for a change. Do y'all think this new Google+ picture editor will be as good as Picnik? Tear...

Do you guys have other awesome photo editing sites? I have Photoshop and I like it for some things but Picnik was just so darn easy!!!!!

So in other blog news...I have reached capacity on how many photos I can upload to my blog. I am really confused by this because I was able to upload photos to this post and I even did a test post yesterday (if you were wondering why I posted twice yesterday, I didn't really mean too). Where I found the issue was uploading to my blog design, specifically my header. Over the past couple of months I've been moving all of my blog content to HTML vs. uploaded pictures so that didn't really matter. Has anyone else run into this over capacity problem with Picasa? I never upload anything to Picasa but every picture on my blog is automatically stored there.

In other blog-ish news, if you haven't already, peeps, you need to make the French fried onion spaghetti bake I posted on Saturday. Allison from Austin Moms Blog posted this on my Facebook wall last night...

I realize my posts of late have been a mish mosh of random things...hope you are enjoying them :-)

A few things

Happy Monday friends (if that is possible).

I am so happy to be a part of the Young Married Bloggers network and one of my posts was featured this weekend. Check it out here :-)

We had a great weekend! Jon traveled all last week and I missed the crap out of him. I know Ernie is also glad to have his daddy back to hang with him during the day. 

Jon and I did date night on Friday night and found this awesome little Mexican place right by our house (we could have walked but were too lazy). We LOVE hole in the wall/divey type places and this one was a gem. The only drawback was me putting sugar all over my rice and beans...I was wondering why the salt shaker was so large?? I would say 75% of the time Jon and I go out for a meal, one of us gets to order for the other and surprise. We always share our meals anyway and it makes it fun. He knows what I like, I know what he likes and it keeps it interesting! I am kind of indecisive, especially when there are a thousand things on a menu, so I like when Jon chooses.

Saturday afternoon our friend Kevin came in town from Dallas and is staying for a few days. We always joke with him that we are looking for the perfect guest room for him as we house hunt...we love his visits. We spent the afternoon at the park downtown and Ernie had a blast with the other pups and the guys threw the football.

The guys went to a show downtown and I had a date with these two...

I can't put the book down, it is SO good. Jon is going to read it next, then maybe I will do a book review.  

Sunday morning we made these amazing protein pancakes...3 ingredients...muscle milk, cottage cheese and egg whites. SO good!

Went to church...

Watched some football...

Had some friends over for dinner and fun...


& stayed up late last night playing Rockband.


Oh and I posted 2 recipes this weekend on my blog (kind of an accident)

Anyone know why the collage feature is gone in Picnik? I know they are shutting down but why can't I make collages anymore? Are their other good sites to make similar collages?
