Cheesy Crockpot Mexican Chicken

I can't remember where but I saw a similar recipe either on a blog or in a magazine but since I couldn't find it, I made my own version (and it turned out GREAT!). I am starting to become obsessed with my crock pot for the sheer easiness of the whole process and cleanup.


Ingredients
4-5 boneless skinless chicken breasts (raw)
1 16oz jar of salsa
1 can corn, drained
1 can black beans, drained
1/2 cup chopped onion
1 8oz. block of cream cheese


1. Put all ingredients MINUS the cream cheese into the crock pot and mix well
2. Cook on low for 6 hours stirring occasionally and shredded chicken as it cooks
3. 30 minutes before you are ready to eat, drop the block of cream cheese into the crock pot. It will melt pretty quickly but make sure you stir it all in


Serve warm in tortillas or over tortilla chips. Enjoy!

The rehearsal & rehearsal dinner


As I typed up my previous wedding recap (the reception), I couldn't help but to feel a little sad. I thought it would be the last wedding related post but you're in luck! As I was going through wedding pics (this is totally normal for a newlywed!) I realized I still have so much more to recap. Stay tuned for recaps on my showers, bachelorette party and the events leading up to our wedding. I want to write down every single detail of our wedding because sadly one day, the memories will be distant.

Friday February 4th, 2011....the day that DFW was shut down! The Thursday before our wedding, Texas experienced the wildest weather in nearly centuries (okay I made that number up, but I am pretty sure if could be decades!). Tons of snow, ice and single digit temps. You can imagine my sanity when the talks of the great ice storm of 2011 is blasted over every since news station nation wide...a brides worst nightmare! Thankfully, most of my family arrived safely (my aunt and uncle in Columbia, MO were the only family that couldn't make it) but a few guests were stranded.

Our rehearsal was held in a small conference room at the AT&T Executive Education Center (the main ballroom was being used) at 6pm on that Friday night. Our awesome pastor Kirby prayed over us for the weekend and we practiced the whole shpeel. My childhood best friend Jamie who was singing at our wedding, rehearsed Heavenly Day and I was instantly in tears! The day was finally here!




We headed over to this adorable Mexican food restaurant (El Mercado) right around the corner from the venue. Downtown was DEAD considering the weather (it was still pretty cold but the snow and ice had melted) so we got to spread out in our private little area. We had an open bar and a buffet of chips and salsa, tacos (chicken, beef, pork), rice, beans, guac and all the fixins'. Jon and I immediately fell in love with El Mercado's food when we tried it out a couple of months before the wedding and I think our group enjoyed it! Between mingling with guests and day before wedding jitters, I didn't have much of an appetite. It was seriously such a fun time to have our whole bridal party, aunts, uncles, cousins and grandparents to ourselves before the craziness began.

Somehow I didn't get a picture of this but Jon gave his groomsmen Under Armor Compression Shorts (Jon will be buried in these things he loves them so much) and each a different bottle of alcohol (with some sort of inside joke/dirty meaning lol). Check out my 12 year old brother who has already been a groomsmen in 2 weddings! That is more than I have been in!

2 of our very best friends (and a groomsmen and bridesmaid) Justin and Leah read "10 reasons why they love The Harts!". It was so funny and a total surprise! They are actually getting married this weekend and we are thrilled to be a part of their wedding! P.S. Their last name is/will be McGarry and did you know there is a wine called Hart McGarry?! I think we deserve free wine for life, right?

Jon and I went into a private room to talk, pray and share our last moments before we became husband and wife. We said our goodbyes and I headed to my parents house to have a girly sleepover with all of my bridesmaids and Jon had some buddies over to the cabin. My last night as a Fanning!

Loaded Chicken Alfredo

Easy. easy. easy. Jon and I both love cheese but feel that chicken alfredo can be bland. I literally threw the most random things together and it turned out amazing, I just had to share!

Ingredients
2 chicken breasts cooked (we use the huge split breasts)
3 cups cooked pasta (we used garden variety shells)
1 16oz jar garlic alfredo sauce
1/2 can canned corn
1/2 can diced tomatoes
1/8 cup Italian style bread crumbs (not pictured)


1. Cook the chicken breast and pasta and set aside
2. Mix alfredo sauce, corn and tomatoes until blended evenly
3. Pour the cooked pasta in an un-greased full sized cake pan
4. Mix in alfredo sauce evenly and top with breadcrumbs
5. Bake at 350 for 10-15 minutes or until breadcrumbs start to sizzle
6. Let cool and serve with chicken breasts


As I'm sure you have read in previous recipe posts, we LOVE bone in chicken breasts. They are huge, juicy, delicious and cheap. You could always cut up boneless skinless chicken breasts to add to the pasta if you aren't a bone in fan.

How men and women see colors

I was "Stumbling" on my phone this weekend and came across this article. I was instantly laughing out loud because my sweet husband makes fun of the way I talk about colors. It all started when we visited my big sis and her hubby in Dallas and I was raving about the color of her guest room....burnt sienna. Men are so oblivious to things like that (I betcha he could have left the house and not been able to recall if the room was even painted)! He laughs because I won't ever say green....it is lime green, hunter green, olive green....they are all different! This picture is SO us!

My hard workin' hubby


 
Today I am giving my hubby some major props!! I am so proud of him because last week he accepted a position at a new company! He is very excited and ready to get down to business when he starts this coming Monday. I am so lucky to be married to such a smart, motivated and intelligent man who not only provides for our family financially but is the perfect mate! Friday night we went out to Eddie V's to celebrate....it was FABULOUS! Unforunateuly I didn't get a picture of us together (we had to stick to iPhone pics because my mom was borrowing my camera on vacation) but I did have him take one of me with my giant crab and shrimp salad.


Okay this post is also about us dominating some serious food. Check out some (crappy) pics of the delicious food we ate to celebrate!

To start we enjoyed kung-pao calamari which I wasn't to excited about before trying it. Let me tell you, the ginger soy sauce was rockin.


We also had a cup of crab corn chowder that melted in my mouth. I want to google the recipe because it was the most delicious soup I've ever tasted!


For his main dish, Jon had a 12 ounce filet and when he shared some bites, I literally closed my eyes it was so good!! I had an awesome crap and shrimp salad with blue cheese and garlic remoulade but I barely ate any because of these two sides that we devoured. 

Truffled mac and cheese and brabant potatoes....yum.

Would you believe that we were too stuffed to have dessert?? I could barely walk out of the restaurant so we skipped dessert but went to Truluck's the next night for Jon's favorite dessert in the entire world....a chocolate bag!


It is a bag made out of chocolate filled with berries, almond pound cake and whipped cream drizzled in chocolate sauce. I didn't get a picture of it standing up right but it looked like a brown paper lunch sack. We ate every single decadent bite! We sat at the bar and enjoyed live music while chatting with the fun bartender. I mentioned I loved carrot cake and 5 minutes later he brought us 2 cupcakes, a chocolate on chocolate and a carrot cake with cream cheese frosting! I took a bite of each and we packed the rest in a doggie bag. Let's just say that bartender got a great review on Yelp!
