Spinach and ricotta turkey meatloaf

To be honest I am not the biggest fan of traditional meatloaf but thanks to Pinterest, my eyes have been open to a few different out of the ordinary meatloaf recipes. I love using turkey in leiu of ground beef and the ricotta/spinach combo caught my eye. I made this meatloaf twice in a matter of 2 weeks and will definitely make again and again! It is so moist and flavorful, the perfect spin on your gramma's meatloaf recipe. 

Ingredients
1lb grund turkey
1o oz block frozen spinach, thawed and squeezed dry
1 cup part skim ricotta cheese
1 cup shredded Parmesan cheese
1 egg
1/2 cup Italian breadcrumbs
1/2 tsp sea salt
1/4 tsp black pepper
1 cup marinara sauce
1/3 cup shredded mozzarella cheese

1. In a large bowl, combine the turkey, spinach, ricotta cheese, Parmesan cheese, egg, bread crumbs, salt, and pepper until mixed (use your hands, even though it's gross!)
2. Form into a loaf and place in a greased loaf pan
3. Top with marinara sauce and mozzarella cheese
4. Bake at 350 degrees for 50 minutes
5. Enjoy!

I'll be honest. My least favorite food is meatloaf. But I LOVE spinach, ricotta AND turkey. SOOOOO I'm gonna have to try this. Hahaha
