We ate some yummy chocolate coconut dessert bars when we were in Ohio last year and Jon can't stop thinking about them. I told him if he found me a recipe, I would make them. Although these bars weren't what we were originally looking for, they were delicious and didn't make us feel disgusting after eating multiple servings in one sitting :-).
Ingredients
1 cup oats
1/2 cup flour
1/2 cup brown sugar
1/2 cup chocolate chips
1/2 cup sweetened flaked coconut
1/4 tsp baking powder
1/4 tsp salt
5 tbsp unsalted butter, melted and cooled
1 large egg
1/2 tsp vanilla
1/2 cup flour

1. Line a 9 inch baking pan with foil and grease the foil
2. Mix together the oats, flour, brown sugar, chocolate chips, coconut, baking powder, and salt in a large bowl
3. In a smaller bowl, mix the egg, butter, and vanilla then pour into the oat mixture. Stir until fully combined.
4. Spoon the batter into the greased, foiled pan
5. Bake at 350 for approximately 22-24 minutes
6. Remove from the pan by lifting up the foil when cooled
7. Cut until 16 bars and enjoy!

I'm not usually in the mood for coconut, but these look so good!
Ummmm, yeah, I think I'll have to try out these babies. My husband doesn't like coconut...so I could either leave that out or just eat them all myself! :)
