My husband is Italian and loves Italian food. I, on the other hand, just like it. I rarely crave it and I rarely make it but when I came across this recipe from Allison, I had a hankering for Italian food. Now we all know that Italian food consists mostly of carbs and fatty cheeses, so it is nice to have "skinny" options. This was my first time making manicotti and I will definitely be trying it again!
Ingredients
1 box manicotti noodles (14 count)
16 ounces part skim milk ricotta cheese
2 cups reduced fat shredded mozzarella cheese
1 large egg
10 ounce package frozen spinach, thawed and drained
1/4 cup Parmesan cheese (I used shredded but you can sub shaker)
Salt and pepper to taste
1 jar spaghetti sauce

1. Cook the manicotti noodles according to the package. Be careful because they are fragile and you don't want them to rip
2. In a large bowl, mix together ricotta, 1-1/2 cups mozzarella, egg, spinach, Parmesan cheese, salt and pepper- this is what you will stuff your noodles with
3. Here is the tricky part....stuffing the noodles. You can either pour the spinach mixture into a baggie and snip the corner or just use a spoon. I used a spoon
4. Coat the bottom of a full sized baking dish with a little spaghetti sauce and place stuffed manicotti in the dish
5. Top with more sauce (up to you how much you put) and remaining mozzarella cheese
6. Bake at 375 for 30 minutes or until cheese is melted and bubbling
