I could never be a vegetarian


Don't get my wrong, I have tons of respect for all you vegetarians out there but I personally, could not be one! I never used to be keen on meat until I met my husband. I could go a day or two without meat and I even had weird feelings about eggs (I am weird about textures) but now, my body fiends for it. This year on Good Friday, Jon and I decided not to eat meat. We are not Catholic but chose to do so for personal reasons in remembrance of what Good Friday is actually about. Breakfast, I normally don't eat meat unless Jon makes us fried egg sandwiches so my Kashi cereal and Fiber One held me over. I am such a creature of habit and LOVE lunch type foods. I love leftovers but for dinner ONLY. Lunch means peanut butter and jelly, string cheese, yogurt....kid food! I modified by normal sandwich to exclude any meat products. For the past couple of months (and I never get sick of it) I melt turkey and muenster cheese on a cinnamon raisin English muffin, pictured below. It may sound gross but don't knock it until you rock it.


My Good Friday sandwich was just melted muenester on the English muffin and 30 minutes after I ate, my tummy was rumbling. I tried to fill up on non meat protein (hard boiled eggs and trail mix with almonds and peanuts) but I was still hungry. This caused me to absolutely raid my offices' snack shelves...popcorn, pretzels, mini cookies...empty calories much?

Dinner consisted of veggie corndogs and mushroom mozzarella Boca burgers....now we're talking. I swear you wouldn't' be able to taste the difference in the corndogs. They were delicious and I've stocked up on more ever since. Check out how much protein is packed into these veggie foods. The corndogs have quite a bit of fat but hello, you are eating corn dogs!


Ernie has a weird obsession with cardboard boxes (and sniffing food of course)


We hosted Jon's birthday party on Good Friday so not only was my body missing a major part of my diet, I chowed down on chips/queso, cake balls, peanut butter balls and more. So to all you vegetarians out there, I salute you!

And I (vegetarian) thank you for accepting our lifestyle. It's admirable you are able to try vegetarian days on occasion.

Psst... the cat appears to know a good thing?

Just found this post from another recipe post haha... I hate those boca burgers, but never tried the corn dogs (WHICH I MISS!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!) so I'll definitely pick those up next shopping trip!
