Kale chips are all the rage in the healthy eating community (and Pinterest of course). I am a HUGE chip eater and knew I wanted to give them a try. Jon and I tend to eat dinner pretty late but always have snacks right when I get home from work that most always consist of veggie chips, hummus and cottage cheese. My late night craving is always chips. To save my waist from growing horizontally, I try to keep only veggie and tortilla chips in the house. Kale chips were good, definitely didn't taste like a potato chip if you ask me but not bad at all. The one thing that blows is you have to eat them all in one sitting or else they will wilt and get slimy (okay so Jon ended up eating the slimy leftover ones anyway...men).
Ingredients
1 bunch kale
Olive oil
Salt
Parmesan cheese
1. Wash kale and chop into "chip sized" bites
2. Toss in olive oil and lay flat onto a lightly greased cookie sheet
3. I topped half of mine with a generous amount of salt and the other half with a little salt and Parmesan cheese
4. Bake at 325 degrees for about 10-12 minutes
5. Enjoy!

My husband is a huge chip fan, I have to hide the tortilla chips sometimes. I've made kale chips before and absolutely love them! For the leftovers, I still them back in the oven for a couple minutes to crisp them back up, but there are rarely any :)
ruthie, maybe you didnt bake them long enough?? when I make kale chips I can cover them in a bowl and they stay good all week, and they are literally crispy all the way through, no slimyness! actually, I dont use cheese on mine, maybe it was the cheese??! interesting! I hoe you give them another try, i love them! I eat a ton of salt on mine though, so that isn't that healthy is it??! hahaa

Yum! I made squash chips the other day, they were really good too! Nice summer chip! LOL. You should give it a try if you like squash :)

ok i know everyone says these taste like chips, you say not quite, my question is: but do they taste like kale? because I cant stand kale!! but i would like a healthier alternative haha
