If you are married to a muscle man, health nut like I am, you are constantly looking for recipes chock full of protein (but still tasty). I adapted this recipe from PB Fingers to create chocolate protein pancakes and wanted to share the recipe....
- 1/3 cup cottage cheese
- 3 scoops chocolate peanut butter Muscle Milk Powder (or just regular chocolate flavor)
- 4 egg whites
*these measurements made 4 good sized pancakes, 2 for me and 2 for my husband
The original recipe directed you to whip the 3 ingredients with an immersion blender and since I don't have one of those, I used my food processor/blender and that was a nightmare! The batter just got stuck down in the blade so if you don't have an immersion blender, just blend with a spoon, it worked fine!
(the batter is REALLY thick)
Cook on the stove top until batter is set. Please do not judge my pancake shaping abilities, so much for circular pancakes!
We always top our pancakes with peanut butter and honey...Jon even added some sliced banana...yum!
