This delicious and easy recipe can serve as a quick breakfast on the go, afternoon snack or yummy dessert. As I've said before, I try to find healthy-ish recipes with as much protein as possible to entice my hubby into jumping off the healthy dude diet. I've made these pb protein bars twice, the first time just to keep around the house and the 2nd, for Jon's birthday party last night. Check it out!
Ingredients:
1/3 cup honey
1/3 cup brown sugar
1 cup creamy peanut butter
1 cup chunky peanut butter
1 tsp. cinnamon
5 cups bran flakes
**Optional, 1 cup craisins or raisins (I used a raisin medley mix)
1. Simmer honey and sugar on medium heat until it melts and starts to bubble. Add the cinnamon and stir until blended
2. Stir in the peanut butter until smooth
3. Remove from heat and stir in the bran flakes and craisins (do this slowly! add half and stir, then add the rest)
4. Pour mixture into an 8X8 pan and refrigerated for several hours before cutting into squares and enjoying!
**For Jon's birthday party, I lined mini muffin tins and made "balls" instead of bars!
