This recipe comes to you from What's Cookin' Chicago via Pinterest. Jon and I eat chicken multiple times a week and I am always looking for new ways of preparing it. This recipe did not disappoint, I can't wait to make it again!
Ingredients
2-3 boneless skinless chicken breasts (we love the big bone-in breasts so I de-boned those)
4 tbsp melted butter
16 Ritz crackers, crushed
6 ounces shredded cheddar cheese
6 ounces shredded cheddar cheese
1 clove garlic, finely chopped
3 stalks green onions, thinly sliced
Salt and pepper
Salt and pepper
1. Melt butter in a shallow dish (I used a pie dish)
2. Add crushed crackers, cheese, garlic, scallions, and salt and pepper (to taste)
3. Coat the chicken breasts in the cracker/cheese mixture
4. Place chicken breasts in a baking dish and bake at 350 degrees for approximately 30 minutes or until chicken is cooked through
(that is a cheddar bacon biscuit on the side)
5. Enjoy the mess outta this recipe!

Ruthie, I did the same thing with tilapia fillets! The chicken sounds delish though, going to have to try it!

Made these last night, and they were SOOOO good and super easy! The only problem - my boyfriend eats faster than I do and since he loved it so much too he started stealing bites of MY chicken off MY plate! Thanks for the recipe, and Happy Holidays to you and your family!
