Ingredients
Approx. 15 jumbo pasta shells
4oz (1/2 a block) cream cheese, softened
1/2-1 cup shredded or shaker Parmesan + some for topping
3 tablespoons prepared pesto (I bought mine prepared)
2 cups shredded cooked chicken
1 medium tomato, diced
2 cloves garlic, minced
Salt and pepper
1. Cook the shells according to the packaging but be sure to cook a little al dente since you will be putting them into the oven. Set aside
2. In a large bowl, mix the rest of the ingredients (except for the cheese to top)
3. Using a spoon or cookie scoop (worked so well!), fill each of the shells and place into a baking dish sprayed with cooking spray or lined with foil
4. Sprinkle with Parmesan cheese
5. Bake at 350 degrees for 25-30 minutes

I loooove stuffed shells and how many different variations can be made! I've never put pesto in mine... I love it, but Jared not so much! These look delish though :)

I know I already commented on this, but I wanted to tell you that we did make it and we loved it!! I was too impatient to use your ice cream scoop method, so I just filled them with my fingers! :o)
