Pesto Chicken Stuffed Shells

I love pesto,  Jon loves Italian food, and I'd never made shells before so this recipe intrigued me. After taking one bite, Jon told me I needed to add this to the rotating menu. Score! This meal is easy and delicious and supposedly great to make ahead and freeze. The leftovers were just as good as hot out of the oven too.

Ingredients
Approx. 15 jumbo pasta shells
4oz (1/2 a block) cream cheese, softened
1/2-1 cup shredded or shaker Parmesan + some for topping
3 tablespoons prepared pesto (I bought mine prepared)
2 cups shredded cooked chicken

1 medium tomato, diced
2 cloves garlic, minced
Salt and pepper


1. Cook the shells according to the packaging but be sure to cook a little al dente since you will be putting them into the oven. Set aside
2. In a large bowl, mix the rest of the ingredients (except for the cheese to top)
3. Using a spoon or cookie scoop (worked so well!), fill each of the shells and place into a baking dish sprayed with cooking spray or lined with foil
4. Sprinkle with Parmesan cheese
5. Bake at 350 degrees for 25-30 minutes

You make the best stuff! I am going to try these once I can eat meat again...or I wonder if I could make them without the chicken?

I loooove stuffed shells and how many different variations can be made! I've never put pesto in mine... I love it, but Jared not so much! These look delish though :)

I know I already commented on this, but I wanted to tell you that we did make it and we loved it!! I was too impatient to use your ice cream scoop method, so I just filled them with my fingers! :o)
