This recipe comes to you from PB Fingers', Julie! We were going out one Friday night and had an hour and a half to spare before leaving and my sweet tooth was aching. These cookies are easy, delicious, and kind of have the consistency of muffins (which helps me justify eating 3 in 1 sitting).
Ingredients
1/4 cup whole wheat flour
1/4 cup flour
3 tsp cocoa powder
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup brown sugar
1/4 cup sugar
1 egg
3 tbsp canola oil
1/2 tsp vanilla
1 cup old fashioned oats
*makes 12 cookies (I actually doubled the recipe when I made them)
1. Combine flours, baking powder, baking soda, and salt in a bowl
2. In separate bowl, beat the sugars with 1 egg
3. Mix canola oil and vanilla into sugar mixture
4. Slowly beat sugar mixture into flour mixture
5. Gradually add in oats and beat until fully combined
6. Scoop cookies onto a greased cookie sheet...if you don't already have one, a cookie scoop is worth buying!
7. Bake at 350 degrees for 8-10 minutes until cookies are slightly browned

These brownies are amazing! I’m lucky I was giving them as a gift, otherwise I would’ve eaten them all myself. So easy to make too.
