French Fried Onion Spaghetti Bake


I posted on Monday about how I made the most amazing spaghetti dish last weekend and friends, today I am sharing the deliciousness with you! Jon was traveling this past week and I was more than happy to eat these leftovers every night. I was sad when they were gone. I am not the biggest Italian food fan but I must say, this one takes the cake. I will probably make it once a month at least!

Ingredients
8 ounces uncooked spaghetti
1 lb ground beef
1 (26.5 oz) jar spaghetti sauce (I used Spicy Red Pepper)
1 tbsp butter
1 cup chopped red bell pepper
1/2 cup chopped onions
8 ounces cream cheese
2 tbsp milk
Parmesan cheese
Small can of French Fried Onions 

1. Cook the spaghetti according to the package, set aside
2. Brown the beef, drain the fat, and add the whole jar of pasta sauce to the skillet
3. Combine onions, red peppers and butter in small glass bowl. Cover and microwave 4 minutes on HIGH until soft.
4. Add the cream cheese and milk to the glass bowl and mix until fully combined (you may have to microwave the cream cheese block so it is easy to blend)
5. Using a full size cake pan/Pyrex dish, layer in the following order: thin layer of meat/sauce mixture to coat bottom of dish, spaghetti, cream cheese mixture, remainder of meat/sauce mixture, Parmesan cheese (whatever amount you want, I used about 1/2 cup)
6. Bake at 350 degrees for 25 minutes. Top the casserole with the French Fried Onions and bake for another 5 minutes Do not let these burn! It is what makes the whole dish!
7. Let cool and enjoy!

Hahaha I agree with Erin's comment about a cookbook with Ernie on the front! This recipe looks DELISH. I love cooking big meals right before my fiance hops out of town and then I get to eat the left overs for breakfast, lunch, and dinner. Wait, did I just type that for the world to see? ;)
