I saw someone post that this dish is the love child between a taco/enchilada and lasagna. And they were right. It was amazing!
Ingredients
1 lb ground meat
1 medium onion, chopped
1 packet taco seasoning (about 1/4 cup)
2/3 cup water
3 cups shredded cheese (I used half cheddar, half Mexican blend)
1/2 cup sour cream
1/2 cup taco sauce (in the salsa aisle, mine was Taco Bell brand)
1 small can diced green chilis
1 can enchilada sauce
1 lb ground meat

Tortillas
1. Cook meat with the diced onion. Add taco seasoning, 2/3 cup of water and taco sauce and set aside.
2. In a medium bowl, mix 2 cups of your cheeses with the sour cream. Add green chilis and stir to combine
3. Grease a full sized baking pan/dish and add a little of enchilada sauce to the bottom (about 1/4 cup)
4. Put a layer of tortillas over the enchilada sauce. Add 1/3 of the meat mixture and some of the enchilada sauce.
5. Top with another layer of tortillas.
6. Add 1/2 the cheese/sour cream mixture to the top of the tortillas.
7. Add another tortilla layer
8. Add the rest of the meat, some enchilada sauce, and rest of cheese/sour cream mixture
9. Add 1 more layer of tortillas and top with remainder of enchilada sauce and 1 cup of shredded cheese
10. Bake at 350 degrees for 30 minutes.
*I know it is a lot of steps but honestly, you can't mess it up. If you get lost, just layer how you want!

i don't want to downgrade this delicious post by saying an ugly word like this, but 'droool'. I want to stuff my face in it and never stop eating. I think it's the cheese, I could have a serious affair with cheese.
