I know what you're thinking, black bean brownies?! Don't fear, these brownies were so fudgy and delicious, probably the best I've ever had. I've tried some brownies from that Sneaky Chef book and they were no bueno but the black bean puree really takes on any flavor. And of course my husband loved the added protein. Depending on what brands you use, this could be a gluten-free dessert.
Ingredients
1 (15-oz) can black beans, drained and rinsed very well
3 large eggs
3 tbsp canola oil
3/4 cup sugar
1/2 cup unsweetened cocoa powder
1 tsp vanilla
1/2 tsp baking powder
Pinch of salt
1 cup semi-sweet chocolate chips, divided
3. Mix in 1/2 cup of the chocolate chips and pulse a few times just until the chips are incorporated
4. Pour the batter into a greased 8 by 9 baking dish and smooth
7. Let cool and enjoy!
