Warm baked Potato Salad

Have any of you big city readers been to Jasper's before? I know we have one in the Domain in Austin but I've only ever been to the one in Plano and I died and went to heaven after devouring my food. The main thing that caught my taste buds were the hot baked potato salad. I am NOT a fan of the cold, mustard colored, potato salad that sits sweatily on picnic tables in the summers but this...wow oh wow! Luckily I was able to find the chef posted the exact recipe on his website and I am happy to report it is just as delicious as the $10 restaurant version! It paired wonderfully with pulled pork sandwiches last week at family game night and lucky guess but you probably have most of the ingredients on hand.

Ingredients
2.5lbs red potatoes
Olive oil
Salt to taste
8 slices bacon
1 cup sour cream
1 bunch green onions, chopped
8 ounces shredded cheddar cheese
*makes 8 servings

1. Wash the potatoes and cut them into 1 inch cubes
2. Toss them with a olive oil and salt in a large bowl (use your best judgement, you don't want them to be dry or oozing with oil)
3. Spread them evenly on a baking sheet lined with foil and bake at 350 degrees until they are tender (about 20-30 minutes depending on your oven)
4. Meanwhile, cook your bacon according to the package (or use pre cooked bacon). Chop into topping sized pieces
5. Once potatoes are tender, set them in a large mixing bowl. 
6. Stir in the sour cream, cheese, green onions and bacon.
7. Season with salt and pepper to your liking
8. Transfer into a glass baking or serving dish and microwave to your preferred temperature (I zapped mine for 2-3 minutes before serving)

I've never seen a recipe for warm potato salad...every one I've seen has called for it to be cold. I am definitely passing this recipe along to the cooks in my family. Hopefully it will end up on the table at our next family dinner. Thanks for sharing!

Yum, yum, yum! This reminds me a lot of German potato salad...it's also warm...but vinegary. I will have to give this one a try!

How cute is that owl! Is it a Scentsy warmer? I've got to get my hands on that one. I always love potato salad when the potatoes are still warm (everyone in my family thinks I'm nuts). I should give this recipe a go to get my fix!
