Fudgy black bean brownies


I know what you're thinking, black bean brownies?! Don't fear, these brownies were so fudgy and delicious, probably the best I've ever had. I've tried some brownies from that Sneaky Chef book and they were no bueno but the black bean puree really takes on any flavor. And of course my husband loved the added protein. Depending on what brands you use, this could be a gluten-free dessert. 

Ingredients
1 (15-oz) can black beans, drained and rinsed very well
3 large eggs
3 tbsp canola oil
3/4 cup sugar
1/2 cup unsweetened cocoa powder
1 tsp vanilla
1/2 tsp baking powder
Pinch of salt
1 cup semi-sweet chocolate chips, divided


1. Process the black beans in a food processor until smooth


2. Add the rest of the ingredients, minus the chocolate chips and process again until smooth


3. Mix in 1/2 cup of the chocolate chips and pulse a few times just until the chips are incorporated


4. Pour the batter into a greased 8 by 9 baking dish and smooth
5. Sprinkle with the remaining 1/2 cup chocolate chips.


6. Bake for 30 to 35 minutes at 350 degrees


7. Let cool and enjoy!

I have got to try these! I've seen recipes call for black beans before but haven't been that adventurous yet, this may just need to happen this weekend :)
