Skinny Zucchini Enchiladas

You will definitely appreciate this recipe after you most likely gorged yourself of Mexican food and ritas yesterday :-)

Because I am married to Mr. Protein, it is hard for me to find a non meat recipe that he will eat. If I make a vegetarian dish, Jon usually cooks up some ground beef or shredded chicken for added protein. I am so past being offended by this and try to make at least 1 vegetarian dish a week (or 2-3 times a month at least). We love Mexican food. Mexican food isn't always the healthiest thing for ya since everything is covered in cheese so I was pumped when I found this healthy Mexican dish!

Ingredients- enchiladas
2 medium zucchinis, grated or thinly sliced
1 tsp olive oil
2 cloves garlic, minched
2 stalks chopped green onions
Salt and pepper
1 1/2 cups shredded reduced fat Mexican cheese
4 tortillas
Cilantro and sour cream to top (we used cottage cheese for more protein!)

Ingredients- sauce
1 garlic clove, minced
1 cup tomato sauce
1/4 tsp chili powder
1/4 tsp ground cumin
1/2 cup fat free vegetable broth
Salt and pepper
*Makes 4 enchiladas

Sauce
1. Saute garlic in medium pot with cooking spray
2. Add chili powder, cumin, broth, tomato sauce, salt and pepper and bring to a boil.  
3. Reduce the heat to low and simmer for 5-10 minutes.
4. Set aside for now

Enchiladas
1. Saute garlic and scallions in olive oil over medium heat for about 3 minutes
2. Add zucchini, salt and pepper to taste and cook about 4-5 minutes
3. Remove from heat and mix in 1/2 cup cheese
4. Drop an even amount of filling into each tortilla and roll up and place in an ungreased baking dish
5. Top enchiladas with sauce and remaining cheese
6. Bake at 400 degrees for 20 minutes
7. Top with sour cream or cottage cheese and cilantro and enjoy!

Ruthie dear have you ever tried vegan cheeses? There is a brand available at Whole Foods called "Daiya". The shredded cheddar or mozzerrellas are super amazing...try it!
