Spinach Avocado Pasta

We love avocados. We love pasta. Why not put it together? This meal was so fresh and delicious. We added some shredded chicken for added protein, I will definitely make it again!

Ingredients
8 ounces of pasta
2 tbsp butter
1 tsp minced garlic
Salt
4 big handfuls fresh spinach leaves
1/4 cup Greek yogurt
1 avocado, peeled, pitted, and cut into large chunks
Parmesan cheese to top


1. Prepare pasta according to package. When it is cooked, drain but set aside about 1/2 of th pasta water.
2. In a medium pot, melt butter and add garlic. Cook for 1-2 minutes. Add a pinch of salts and spinach. Cover the pot and reduce to low-medium heat and let cook for 4-5 minutes until spinach is wilted
3. Add Greek yogurt, avocado and 2-3 tbsp pasta water to the spinach mix. Stir until completely mixed
4. If you have an immersian blender, puree until smooth-ish but if not, transfer to a food processor and do the same. The sauce should be the consistency of a pesto sauce.
5. Pour sauce over pasta and top with Parmesan cheese
6. Salt and pepper to taste, enjoy!

I know this has nothing to do with this post. But I am new to following you and I just wanted to tell you that I LOVE your dog. He is so cute and it is nice to see someone who treats their dog like I do mine. With that said, I thought you would like this link.
