Holy sweet potatoes. Be sure to check out the sweet potato cracker recipe I posted last week. I had extra sweet potato puree that I did not want to see go to waste so I whipped up a loaf of low fat sweet potato bread. It was delicious and super moist. It reminded me of pumpkin bread actually (which I am a super fan of).
Ingredients
1 cup whole-wheat flour
1/2 cup all-purpose flour
2 tsp baking powder
1/2 tsp cinnamon
1/8 tsp nutmeg
1/2 cup brown sugar
1 large egg
1/2 cup no-sugar-added applesauce
1/4 cup milk
1 cup sweet potato puree
1. Combine all dry ingredients and stir until mixed
2. Add wet ingredients (egg, milk, applesauce, puree) to dry ingredients and mix until a thick dough is formed
3. Bake at 350 for 1 hour or until toothpick inserted in center comes out clean (again, my oven has a mind of its own so I baked at 325 for 50 minutes)
4. Enjoy warm with butter, peanut butter or honey
This bread was simple and delicious. It tasted very similar to pumpkin bread mmm mmm.
