When I came across this recipe, I knew I had to make it! Since mac n cheese lacks a major part of my husband's diet (PROTEIN!), I tested out this dish on my girlfriend Leah. It was the perfect post-yoga meal for us :-). I changed the original recipe quite a bit and it turned out delicious!
Ingredients
2 cups of your choice pasta, I used garden variety shells
1 head cauliflower, chopped into bit sized pieces (like you'd see on a veggie tray)
1 cup Italian style bread crumbs
3 tablespoons olive oil
Salt and pepper
1 cup onion, finely chopped
1 1/2 cups grated extra-sharp Cheddar

1 1/2 cups sour cream
1/2 cup milk
1/2 cup milk
Basil leaves
1. Boil and cook the pasta according to the package. Add the cauliflower pieces for the last 3 minutes of cooking.
2. Drain the pasta/cauliflower and return to pot.
3. In a separate pan cook 1 tbsp olive oil, the onion, 3/4 teaspoon salt, and 1/2 teaspoon pepper on medium for 5-7 min or until the onion is soft.

4. Add the milk, cheese and sour cream and stir until completely mixed. Now mix the cheese mixture with the cooked pasta/cauliflower
5. In a separate bowl, mix the remaining 2 tbsp of olive oil with the breadcrumbs. The mixture will get "clumpy" but stir until even
5. Pour the pasta mixture into a full size greased baking dish and cover with breadcrumbs. Sprinkle with basil leaves and cook for 12-15 minutes at 400 degrees.
6. Let cool and enjoy!!
