Chicken pot pie on the fly


Yes I realize the title of this post rhymes and I didn't mean for it to sound so cheesy! So what is chicken pot pie on the fly you might ask? Well it was created because I have been on a mission to clean out our freezer and cabinets (stocked full of frozen meats, veggies and canned soups). I knew we had leftover chicken from a previous nights dinner, 1 frozen pie crust, veggies and cream of chick soup so I decided to experiment. Turns out this was the best damn chicken pot pie I had put into my mouth!

I had no intentions of posting this recipe so I apologize for the lack of pictures and more importantly, the lack of proper measurements.

Ingredients
3 cups boneless, skinless chicken breast, cooked and cubed
2 cups cubed potatoes
1/2 onion, chopped
2 cloves garlic, minced
2 cups frozen veggies (we used the corn, pea, lima bean, green bean mix)
1 can cream of chicken soup
1 can cream of mushroom soup
1 pie crust

1. Saute the onion, potatoes, and garlic in a frying pan until potatoes are soft and onions are cooked
2. In a big bowl, mix the potatoes, onions, chicken, veggies and 2 soups. Stir until mixed evenly
3. Pour the chicken mixture into a baking dish and top with the pie crust
4. Bake at 350 for 25 minutes until crust is golden brown




Jon and I ate half the pan for dinner and I'm pretty sure I had dreams of making love to it that night...it was that good.
